Homemade Egg Rolls


These delicious Egg rolls were cooked by my amazing sister Laquinta. She is always sharing recipes with me that are a must try. 
To get her homemade egg rolls you need 
shrimp, cabbage & green onion
hamburger meat, cabbage & green onion

She made two different kinds. 

Directions: 
Cook your cabbage but not all the way (You will be letting them finish cooking in the deep fryer)
Place your bag of shrimp in the skillet with some butter and let cook
Cook your hamburger meat and then drain it. 

After you have did these steps you can either place the cabbage in with the shrimp and hamburger or just mix when you get ready to do the wraps. 
If putting the cabbage in the hamburger meat after draining it let cook for about 10 minutes together. 

Place 1 egg in a bowl (you will use to dip or brush the wraps before placing in the deep fryer). 

On to making the wraps!!! 
Place shrimp or hamburger meat with cabbage and green onions in the wrap (don't fill it up to much you want it to wrap without tearing. 

Fill egg roll wraps with ingredients, roll then brush with egg yolk and drop it in the dip fryer & ENJOY! 









Budget Meal: Chicken Chili

This is a great meal for the fall nights. Taking a can of chili and adding to it is a great way to make a simple and inexpensive pot of chili.


For this recipe I used a can of chili, two cans of Kidney beans, one can of rotel, fried onions, chili powder, fajita season, and cayenne red pepper and a pack of chicken. I took the pack of chicken and broiled it and then shred the chicken. Afterwards I placed the shredded chicken into the slow cooker with fajita seasoning and let it cook. I cooked the kidney beans and after that placed everything else in the slower cooker with the chicken and added the chili powder and red pepper. After you let the chili cooked for a while I added the fried onions.  




Salmon Dip


Ingredients 

Worcestershire Sauce (French's) 
Salmon (Chopped)
1 tablespoon fresh diced onions
Shredded cheese
1/3 cup sour cream
1/3 cup cream cheese
1/4 cup mayonnaise

Directions


Lightly season salmon with some garlic and let it sit in Worcestershire Sauce for about 15 minutes then grill Salmon until it's cooked. Combine your cooked Salmon, mayonnaise, sour cream, cream cheese, and onions and mix well. Add Cheese. I placed covered dip in the fridge for one hour to let all the flavors mingle. 

Serve with Wheat Thins (I used Spicy Buffalo) you can also serve on bread, with celery or tortilla chips. 




Baked Honey and Cinnamon Apples

Today I was having a little sweet tooth but didn't want anything heavy, nor did I feel like driving. So I grabbed what I had here at the house and what better way to kick off FALL (which I'm very excited about) Then apples and cinnamon!

Very easy recipe (I'm all about the quick and easy meals).


Ingredients:

Apples
Honey
Cinnamon
Caramel Syrup

Directions:

Chop up your apples, layer with honey, top with cinnamon and place in the oven to bake.
Once you take the apples out of the oven, top with Caramel Sauce and enjoy!

I love to enjoy mine with some milk and COFFEE CUBES!!!!! Delicious!

Simple Barbecue Lunch Sandwich



Ingredients:

2 small chicken breast
Shredded cheese
Barbecue sauce (I use Sweet Baby Ray's)
Chopped Onions
Dijon Mustard
Mayo
2 slices of bread (toasted)

Directions:

Boil your chicken breast. Once the chicken is done cooking shred it and add to the slow cooker with some barbecue sauce. Let the barbecue chicken heat up for about 15 minutes.
In a pan Saute your chopped onions.
When meat is done, place on toasted bread (Bun or Regular wheat bread). Spread Dijon mustard and mayo on bread, top with chicken, sprinkle shredded cheese and add onions on top.

Buffalo Chicken Stuffed Shells

If you love HOT FOODS this is for you!!

I was walking through Kroger's and walked past the box of Jumbo pasta shells immediately I was like hmmm what could I put inside some Jumbo pasta shells and buffalo chicken was the first thing to come to my mind (That's pretty normal) I try and see what all I can make with Buffalo chicken (My favorite).
 Simple, Simple, Simple!!!

Ingredients:

1 box of Jumbo pasta shells
1 bottle of Buffalo wing sauce (I use Moore's)
Shredded cheese (whatever kind you like)
Chicken (I use diced chicken)

Directions:

Boil your jumbo pasta shells (Don't over boil you don't want them to be to moist where they don't hold your food well.

In a skillet heat up your diced chicken (I also season it a little)---"Seasoning" is word I hardly see bloggers use lol get use to it here:) When chicken is cooked add it to a bowl and pour in your buffalo sauce and your cheese, however much you like, I put a lot because I like it HOT!

Once your pasta shells are done and is mixed well with the sauce and cheese take a spoon and place it inside the taco shells, Add leftovers on top, top with lots of cheese or just a little:) and cook in the oven on 350, I believe I cooked it for about 20minutes just enough to get it hot and cheese melted.

Tea Time?

Nothing better then a cup of nice hot tea after a long day and believe me I have those days often. 
A secret, sometimes I enjoy drinking tea and having some fruit because the plate set is just so darn cute!!
